Chocolate Chip Loaf

When I was a child, my Grandmother would spend the entire of her Sunday baking.  Our house would smell of the delicious cakes and breads for almost an entire week afterwards, and by the time it was gone it was Sunday again and it would start all over.  I think that is one of the things I miss most about venturing out on my own.  I’m slowly starting to make my new apartment mine, but it’s the small touches like the freshly baked goods that haven’t quite seeped in yet.  But I’m going to get there.

My Grandmother made this chocolate chip bread about once a month or so, and it was always a hit (because chocolate!).  Flicking through her old recipe book, this is one I only vaguely remembered but as soon as I tasted the fresh out of the oven slice it brought the memories flooding back.  There’s just something about food that does that.

Chocolate Chip Loaf

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chocolate chips

Directions:

  • Preheat oven to 350 F.
  • Combine flour and baking powder in a bowl and set aside.
  • In a separate bowl combine sugar and butter and stir until light and fluffy.  Add the eggs one at a time, mixing well after each addition. Add vanilla. Stir.
  • Add half of the dry mixture to the wet mixture and stir until combined. Add half the buttermilk and stir until combined.  Repeat with the remaining ingredients.  Fold in chocolate chips.
  • Pour batter into a greased 9 inch loaf pan.
  • Bake for 45 minutes.
